Rice noodles with tofu and vegetables – the healthiest comfort food

Rice noodles are very low in calories, contain protein and dietary fiber, and the amount of sugar is negligible.
These noodles also contain a very low content of carbohydrates and fat.
However, it should be borne in mind that the cooking method can increase fat. What we love most about them is their adaptability.
We can fry them, add them to soups, serve them with a variety of vegetables, or enjoy them in a healthy meal where tofu provides sufficient protein and vegetables supply adequate vitamins.
And what more do you need? Yeah, we know. You need to prepare the dish quickly and easily. And we have met that requirement, don’t worry!
Smoked tofu is sliced and thrown into the wok at the very end of cooking, and the vegetables will only need a few minutes to steam and brown.
Smoked tofu is firm; it is smoked over a wood fire for 3-6 hours.
Because of its flavor, but also the fact that it is “ready-made”, it is enough to just heat it up briefly and fry it.
Sliced or diced, it will fit into cold appetizers, sandwiches, and colorful salads, and most of all into Asian dishes like these that we love.

- 150g rice noodles
- 150g smoked tofu
- 1 spring onion
- 1 carrot
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 3 tbsp tamari sauce
- 1 tsp curry seasoning
Preparation:
Cook the noodles according to the instructions on the package.
Place all the chopped vegetables in a wok and sauté briefly, adding tamari sauce.
Serve everything together with chopped tofu.
