Healthy and delicious salad with black lentils – recipe

Ingredients :

  • 150 g  beluga lentilsbay
  • leaf cherry tomatoes
  • 1 cucumber
  • 1 roasted pepper
  • 1 green onion
  • 2 tablespoons of chives olive oil
  • apple cider vinegar

Preparation:

Rinse the Beluga lentils well and soak them in advance if desired.

Cook the lentils in boiling water with a bay leaf added. Once the lentils are done, rinse them with cold water and drain.

Add chopped green onions and chives.

Season with salt, pepper, olive oil, and a little vinegar. Chill the salad and serve it with chopped cucumber, cherry tomatoes, and strips of roasted peppers.

The salad is excellent and can last up to several days if stored in the refrigerator. Besides being a delicious side dish for gatherings or barbecues, it is also a fantastic complete standalone meal packed with healthy proteins and fiber.
