There are really many varieties of pancakes.
I can only say that these are one of my favorites, and we often prepare them at home.
Of course, we do not forget to combine a protein spread, either chocolate or vanilla, but I can only say that in the end it is a winning gastronomic combination.

- 50 g almond flour
- 3 tablespoons white flour
- 1 teaspoon baking powder
- 1 egg
- 250 ml almond milk
- a little honey

- Step 1: Gather and Prepare Ingredients
Measure out 50 g oat flour, 50 g almond flour, 3 tablespoons white flour, 1 teaspoon baking powder, 250 ml almond milk, 1 egg, a little honey, a pinch of salt, and some coconut oil for cooking.
Have your favorite spread or toppings ready (Proteinella, nut butter, fresh fruit, or yogurt all work beautifully). - Step 2: Mix the Dry Ingredients
In a large mixing bowl, combine the oat flour, almond flour, white flour, baking powder, and salt.
Stir well so the baking powder distributes evenly. - Step 3: Add the Wet Ingredients
Crack in the egg and pour in the almond milk.
Add a drizzle of honey for natural sweetness.
Mix everything together with a whisk until smooth and lump-free. - Step 4: Let the Batter Rest
Allow the batter to rest for about 10 minutes.
This helps the flours absorb the liquid and gives you fluffier pancakes. - Step 5: Heat the Pan
Place a non-stick pan over medium heat.
Add a small amount of coconut oil and let it melt evenly. - Step 6: Cook the Pancakes
Pour a small ladle of batter into the pan.
Spread gently into a round pancake shape.
Cook until bubbles form on the surface and the edges start to look set (about 2–3 minutes).
Flip carefully and cook for another 1–2 minutes until golden brown.
Repeat with the remaining batter. - Step 7: Serve and Enjoy
Stack your warm pancakes on a plate.
